You've seen this meal plan before....I'm recycling! lol...I'm also restarting the 21 Day Fix and wanted to keep it simple. I've already done the work so reusing this meal plan makes sense- why reinvent the wheel?

Last Thursday I had my birthday. I had no expectations that it would be a day unlike any other. I make birthdays a big deal for my kids, they are young and it is so exciting for them to get older (they start counting down to their birthdays as soon as we hit the first birthdays in the new year "Mommy, how many sleeps until MY birthday?!") and I really enjoy our little traditions like birthday age pancakes with candles for breakfast, birthday balloons and that kind of thing.  My birthday, however, is just another day. I like to do something fun with the kids but otherwise I'm good.

My day started off with a new purse and a fabulous FREE cup of coffee (yeah birthday rewards!). To me,
that was the best! The day couldn't get much better.

My coworkers decided that I needed to have a special day. It's been a rough few months and I know I've been a little preoccupied and sad. When I arrived at work I was greeted with a decorated door:


A lovely manicure kit and new ESSIE colours from my boss. Seriously Madison Ave-hue and Mint Candy Apple are my new favorite colours!

 




And then got a delivery from my parents in NL


Seriously yum!!! My kids loved it and so did the coworkers who were lucky enough to get a tast

Wine and Redneck wine glasses! Love that they come with screw on lids...solves the "summer fly in my wine issue"...and one of my coworkers thought I wouldn't like these....I thought she knew me but I guess not...lol


My day wrapped up with a BBQ with my inlaws and an ice cream cake that the kids picked out all by themselves.

I felt so much love on my birthday. I got an enormous amount of love on facebook and I know most of it was probably because of the reminder but still...I felt loved, appreciated and, most importantly, happy..just really, really happy...I found out the next day that I must have sucked the good days from a lot of folks because my day was incredible and others had bad days...but they didn't share that until the next day. They wanted me to have an amazing day.

Mojito Cupcakes for the teachers

I can't believe today is Ozzy's last day of primary and his last day at his school. The school is closing and French Immersion will be moved to another school in our area. G says it's like deja vu...she started at the same school Oz went to this year and then was moved to the school Oz is going to next year when it opened.

At the end of October last year I started a new job and that meant I needed before and after school care for my little man. I was lucky enough to get a spot in EXCEL and while I worried about him having such a long day at school, he has loved every minute. And let's face it after the school year is up teachers deserve a little "cheer" to celebrate the end of another year with no casualties :)

Keeping in mind that we're on a budget, I wanted to give his EXCEL teachers something practical that they would enjoy but that wouldn't break the bank. One thing that screams summer to me in the mojito. My darling friend Kelly introduced them to me a few years back. At first I wanted no part of drinking something with mint but I didn't want to be rude so I took a glass figuring I would sip it. Yeah...that glass was gone in about 5 minutes and I think we went through 3 pitchers that night...but I digress...



Cupcakes and booze you can't go wrong! I searched Pinterest to find a recipe and didn't find one that I loved so I decided to mash a few recipes together..the result was an amazing, moist chocolate cupcake with a light and refreshing icing...These will be made again! The cake recipe made 24 regular and 24 mini cupcakes while the frosting was only enough to cover the regular cupcakes...guess those minis in my freezer will need a fresh batch in the near future! Enjoy!

Chocolate Mojito Cupcakes

Chocolate cake- adapted from Martha Stewart

Yields 24 cupcakes and 24 mini cupcakes

2 1/2 cups all-purpose flour
1 1/4 cups dutch-process cocoa powder
2 1/2 cups sugar
2 1/2 tsp baking soda
1 1/4 tsp baking powder
1 1/4 tsp salt
2 large eggs, plus 1 large egg yolk
1 1/4 cups whole milk
1/2 cup vegetable oil, plus 2 tablespoons
1  tsp pure vanilla extract
1/4 tsp pure peppermint extract
1 1/2 tbsp white rum
1 1/4 cups warm water

Preheat oven to 350F and line or spray two standard 12-cup muffin pans and 1 mini cupcake tray. 

Sift into the mixer bowl: flour, cocoa powder, sugar, baking soda, baking powder and salt. Add the eggs, yolk, milk, oil, vanilla, peppermint, rum and warm water.  I like to combine my wet ingredients in a bowl and then add them. I find that I get a better cake texture in teh end. 

Beat with a paddle attachment on low speed until smooth and combined, about 3 minutes; scrape down the sides of the bowl if needed.

Divide batter evenly among the muffin cups (my batter was pretty liquid, so I used a measuring cup to pour it out into the muffin cups). 

Bake, rotating pans halfway through the baking time, until a cake tester inserted in the center of a cupcake comes out clean, 20 to 25 minutes. Cool in the pan for a little bit and then transfer onto a wire rack or board to cool completely.
Cupcakes can be refrigerated in an airtight container for up to 3 days (or frozen for a few months)


Mojito Icing- adapted from Better Homes and Gardens
2 tbsp white rum
1 pk know gelatin (about 2.25 tsp)
juice from half a lime
2 cups heavy whipping cream
2 sprigs of fresh mint finely chopped
1/2 cup icing sugar
zest from 2 limes

Measure the rum onto a glass measuring cup with a handle. Sprinkle the gelatin over the rum, set aside.
In a bowl combine the whipping cream and the finely chopped mint. Set in the fridge. Zest the 2 limes and finely chop the zest (you can leave some more coarsely chopped for the garnish if you like)

After two minutes the gelatin should have softened in the rum. Add the juice of half a lime and whisk to combine. Place the glass cup with the gelatin mixture in a pot of bowling water and whisk until the gelatin in completely dissolved. Set aside and allow mixture to cool to room temperature.

Strain the cream mixture into the mixing bowl. Set aside the chopped mint for a later step. Whip the cream on high for 1 minute. Reduce speed and add the icing sugar, return to high, slowly pour in the gelatin mixture down the side of the mixing bowl. Whip until stiff peaks form.

Using a spatula, incorporate half the reserved mint and half of the lime zest. You can add a little green food colour if you like but make sure it has no taste!

I chilled the icing for 5 minutes before piping it onto the cupcakes using a large star tip. I garnished each cupcake with a small mint leaf and the remaining lime zest.

Store frosted cupcakes in the fridge.

I did bring a few into the office and they were met with rave reviews. These are a definite make again!

34 X 34- Today is check in day

Well it's been a year.... a crazy year and I'll reflect on this day a little better tomorrow (but for the record I am having an AMAZING birthday!!!)

But here is the list. The 34 things I set out to do before I turned 34..I didn't do too bad. I'm not going to dwell on the things I didn't get done, I'm carrying some of those things forward...but I did managed to cross quite a few things off. I also have a lot planned/ scheduled and am almost done several others. I've highlighted those. I'm so close to the end of my list!!

I'm really excited by all that I have been able to accomplish in the past year. I think the one I'm most proud of is being in the moment with my family as much as possible. I'm enjoying them in a very different way and I'm so much happier about that :)

Here is my mini bucket list to complete before I turn 34 (June 2014):
  1. Sew something for myself
  2. Run 5k in less than 30 min
  3. Finish a 10k
  4. Post 25 Tutorials/recipes to the blog
  5. Publish 250 posts on my blog
  6. Find my true style
  7. Complete the 30 Day Shred- (Seriously I always give up by day 8... gotta finish it at least once!)
  8. Learn a new skill- Taking suggestions!
  9. Create a "drive in" movie in the backyard with the kids (planned)
  10. Stop allowing the opinions of others shape how I see myself
  11. Complete photo books for both my kids from birth to now
  12. See above- I have two kids...this should count as two on the list!
  13. Do a family Halloween costume
  14. Read an actual book (not a magazine or short story)   It Starts with Food
  15. Conquer my anxiety
  16. Complete 33 Random Acts of Kindness (my kids loved this when we did it last year)
  17. Participate in a Colour Run
  18. Renovate our kitchen (in progress)
  19. Redecorate our main floor living space
  20. Family picnic on the beach
  21. Create a family cookbook with pictures of the family members and dishes (in progress)
  22. Take a photography class (in progress)
  23. Go strawberry picking (missed last season doing this month)
  24. Go apple picking
  25. Design my own dress pattern
  26. Take a weekend getaway with just my hubby (planned)
  27. Take a weekend away with AU & JH 
  28. Complete Amelia's quilt (in progress)

Our family is very sad to share that earlier this week my husband's father passed away.

August 10, 1943 ~ June 9, 2014

Born in Halifax, NS, August 10, 1943, Gordon had a creative spirit and enjoyed painting and building many projects over the years. A skilled carpenter, he built a number of homes and residential developments within the Halifax area and would spend his days off working on his cabin in Chester Basin. He enjoyed riding motorcycles with his best friend Butch and searching the flea markets for hidden treasures with Ida. He was very proud of his children and grandchildren and would boast about their achievements to whoever would listen. He could fix anything and was always happy to lend a hand to a friend in need and enjoyed chatting with many friends in his neighbourhood. 
He is survived by his loving wife of 39 years Ida, four children Garnet (Theresa), Steven, RyLee (Clay) and Gordon (Lisa), ten grandchildren, younger brother Glenn (Holly), sister-in-law Imelda, father-in-law Raymond, brothers-in-law Raymond, Ronnie (Mary Anne), Herbie and many nieces and nephews. Gordon was preceded by his parents Leah and Clyde, brother Gary, and mother in law Jean Pearson. The family would like to sincerely thank the nurses and doctors who attended to Gordon during his illness for their exceptional care and support in his final days. He will be dearly missed by many.
The family will be celebrating Gordon’s life at a memorial gathering on Sunday, June 15 from 6-8pm at the Weir Field Building - 2476 #1 Windsor Hwy, Middle Sackville. In lieu of flowers, donations may be made to the Alzheimer Society of Nova Scotia or a charity of your choice. Online condolences may be sent by visiting www.coleharbourfuneral.com
